  • 2 Tbsp pumpkin seeds
  • Olive-oil cooking spray
  • ½ tsp smoked paprika

Method

    Heat the oven to 400°F. Place the squash cut-side down in a baking dish with 2 tablespoons water and bake for 25 minutes.

    Mix black beans, diced tomato, and the smoked paprika. Turn small acorn squash half cut-side up and spoon in the filling.

    Top with pumpkin seeds and bake for 12–15 minutes more.

    Serve when the squash is fork-tender and the filling is steaming.
