Turkey Zucchini Meatballs

- 5 oz lean ground turkey
- ½ cup grated zucchini
- 1 cup no-salt-added tomato sauce
- ½ cup cooked whole-grain pasta
- Olive-oil cooking spray
- 1 Tbsp whole-wheat breadcrumbs
- Freshly ground black pepper, to taste

Method

Heat the oven to 400°F and line a small sheet pan with parchment.

Mix lean ground turkey, grated zucchini, and the whole-wheat breadcrumbs gently. Shape into 6 evenly sized meatballs.

Bake for 16–20 minutes. Warm no-salt-added tomato sauce in a saucepan and prepare cooked whole-grain pasta according to the package directions if it is not already hot.

Cook the poultry until the thickest part reaches 165°F on a food thermometer. Serve the meatballs with the tomato sauce and pasta.
