Heat the oven to 400°F. Halve the bell pepper lengthwise, remove the seeds, and place it cut-side up in a small baking dish.

Brown lean ground turkey in a nonstick skillet, then stir in cooked quinoa, no-salt-added tomatoes, and the sage.

Spoon the filling into large bell pepper, cover loosely with foil, and bake for 20 minutes; uncover for the final 5 minutes.

Cook the poultry until the thickest part reaches 165°F on a food thermometer.
