- ½ cup shelled edamame
- 1 cup baby bok choy
- 1 Tbsp reduced-sodium tamari
- 1 Tbsp water

- 1 small garlic clove, minced
- 1 Tbsp white miso

Method

Whisk 1 tablespoon miso with the tamari, water, ginger, and garlic until smooth.

Cook sliced mushrooms in a hot nonstick skillet for 5 minutes, then add shelled edamame and baby bok choy.

Stir-fry until the vegetables are tender, add the sauce, and fold in cooked brown rice.

Cook for 2 minutes more, until the rice is steaming, then serve.
