Ginger Tofu Soba Bowl
A tofu soba noodle bowl with a deliberate mix of fiber, protein, color, and satisfying texture.

- 3 oz dry buckwheat soba
- 4 oz extra-firm tofu
- 1 cup broccoli florets
- ½ cup sliced red pepper
- 1 Tbsp reduced-sodium tamari
- 1 Tbsp water
- 1 tsp grated fresh ginger
- 1 small garlic clove, minced
Step by step
Method

Cook dry buckwheat soba according to the package directions, drain, and rinse briefly under cool water.

Whisk the tamari, water, ginger, and garlic. Brown extra-firm tofu in a hot nonstick skillet for 5–6 minutes.

Add broccoli florets and sliced red pepper; stir-fry for 4–5 minutes, then pour in the sauce and return the noodles.

Toss until hot and evenly coated, then serve immediately.
