  • 1 Tbsp reduced-sodium tamari

  • 1 small garlic clove, minced

    Cook dry buckwheat soba according to the package directions, drain, and rinse briefly under cool water.

    Whisk the tamari, water, ginger, and garlic. Brown extra-firm tofu in a hot nonstick skillet for 5–6 minutes.

    Add broccoli florets and sliced red pepper; stir-fry for 4–5 minutes, then pour in the sauce and return the noodles.

    Toss until hot and evenly coated, then serve immediately.
