- 1 cup cauliflower
- 1 cup zucchini
- ½ cup no-salt-added tomatoes
- Olive-oil cooking spray

Method

Heat the oven to 425°F and line a rimmed sheet pan with parchment.

Toss chickpeas, cauliflower, zucchini, and no-salt-added tomatoes with the harissa paste and a light coating of cooking spray.

Spread in one layer and roast for 24–28 minutes, stirring halfway through.

Serve when the cauliflower is browned and the chickpeas and zucchini are hot throughout.
