  • ½ cup red onion
  • ½ cup cooked barley
  • 2 tsp extra-virgin olive oil
  • ½ tsp dried herbs
  • 2 tsp Dijon mustard
  • Freshly ground black pepper, to taste

    Heat the oven to 425°F and line a rimmed sheet pan with parchment.

    Toss Brussels sprouts, red onion with the olive oil, dried herbs, any listed flavorings, and pepper; roast for 8 minutes.

    Move the vegetables aside, add chicken breast, and continue roasting. Warm cooked barley separately if it is already cooked.

    Cook the poultry until the thickest part reaches 165°F on a food thermometer. Serve with cooked barley.
