    Heat the oven to 375°F and lightly coat a small baking dish or four muffin cups with cooking spray.

    Cook any firm vegetables from finely chopped broccoli, reduced-fat cheddar, diced scallion for 3–5 minutes first; finely diced sweet potato should be microwaved with 1 tablespoon water until just tender.

    Whisk eggs, fold in the prepared vegetables and any cheese, and pour into the prepared dish or cups.

    Bake for 14–20 minutes, until set in the center. Cook the egg mixture to 160°F, with no liquid egg remaining.
